Learn 2 Cook , Cook 2 Learn - LogoLearn 2 Cook, Cook 2 Learn has been developed in partnership with Bjuiced and Inspiri, two successful, local social enterprises. Threshold has developed a holistic training package built around the enjoyment of food and cooking.

Cooking PreparationThe sessions have a very practical, fun look at key, life skills including project management, managing your budget, numeracy, literacy and healthy eating as well as developing confidence, improving self esteem and learning about different cultures. All these things combine to provide a solid platform for independent living.

Through this initiative we have started to grow our own vegetables and herbs which we use regularly in our cooking sessions.

The sessions have proved so successful that we are vastly oversubscribed and we are now planning to develop this enterprising idea much further.

Why not try some of our fantastic recipes in our recipe of the month feature prepared by John ‘Toddy’ Lloyd. As Autumn is now upon us, we have included some of our recipes to suit the season....

 

Chopping VegTrio Bake

You will need:

1 tin of chick peas

1 tin of butter beans

1 tin of red kidney beans

1 clove of garlic

1 medium onion - chopped

1 tin chopped tomatoes

1 small pepper - deseeded and chopped

1/2 tsp ground ginger

1 small pinch of cloves

1 stock cube (you choose - beef, chicken or vegetable)

salt and pepper

1 cup of water

A little bit of oil

 

How to cook it:

 

Rinse all the beans together.  Fry the onion, garlic and pepper in the oil until soft.  Add all the other ingredients together in a large pan and cook on a gentle simmer for 40 minutes.

Toddy’s Top Tip

To appeal to different palates, why not throw in some chopped sausages, cubed beef or even some oily fish like mackerel!! My favourite!!

 

Fish Pie

You will need:

1 pound of white fish

1/2 pint of milk

fresh parsley

2 oz butter

1 tbsp of flour

salt and pepper

1 cup of frozen peas

1 pound of potatoes

How to cook it:

Gently poach the fish in the milk until flaky.  Remove the fish form the milk and place in oven proof dish.  Keep the milk!!  In another pan, melt the butter and flour together adding the salt and pepper.  Slowly add the milk to the butter and flour and stir until all the milk is added and the sauce thickens.  The sauce should coat the back of a spoon.  Simmer for 1 minute, then add peas and parsley. Stir through then pour the sauce over the fish.  Boil and mash the potatoes and spoon on top of the fish and sauce.  Bake in the oven for 20 minutes on 190c/gas mark 5.


ToddyToddy’s Top Tip –
For a special occasion, throw in some prawns and a smoked fish.  Yummy!!

 

 

Todd in the hole

 

You will need: 

6 sausages

4oz plain flour

1 pinch salt

1 egg

1/2 pint milk

1 tsp of cooking oil

Chopped mixed herbs

 

 

How to cook it:

 

Make the batter by mixing the flour, salt, milk and egg in a large jug.  Whisk until smooth.  Stir in the chopped herbs.   Pre heat the oven to gas mark 6/240c.  Pour the oil into a large, oven-proof dish.  Place sausages in the dish.  Cook the sausages in the oven for 20 minutes or until brown on one side.  Turn the sausages over and pour over the batter mix.  Cook for further 20 minutes or until the batter is well risen and crisp.

Toddy's top tip - To make it special, fry a sliced onion in a little oil with a tbsp of sugar until sticky and golden brown  and add to the recipe before you pour in the batter!! Gorgeous!!
